Jessie's Potato Bake

2lbs frozen hashbrowns (southern style)
2 cans cream of mushroom soup
3 tablespoons chopped onion
2 cups sour cream
1 1/2 cups white chedar cheese (I prefer cracker barrel for better flavor)

Combine all ingredients and mix well

Place mixture in greased large casserole and bake for 1 hour at 350

If you want to top with corn flakes (gives extra crunch) Melt 1 stick of butter and enough corn flakes to cover the casserole

Top casserole and bake as above

This makes a lot so you may want to cut recipe in half. Unless you like leftovers!

Jessie has been kind enough to make this several times when I've visited and it is great!!
